Kolackys & Kifles - Alice Kuhar's Recipes

KOLACKYS
(Made with Nuts, Fruit or Poppyseed)
Ingredients:
1 cake (l-ounce) fresh yeast
1/4 cup warm water
1 teaspoon sugar
6 cups flour
1 teaspoon salt
2 cups white solid shortening
1 cup sour cream
1 teaspoon vanilla
Additional Sugar
Choice of Fruit, Poppyseed or Nut Fillings
Directions:
Combine yeast, warm water and sugar; set aside. Sift flour together and salt; cut in shortening until small crumbs form; add yeast mixture sour cream and vanilla, work with hands until well mixed and dough forms a ball. Place in covered bowl and refrigerate overnight or at least 6 hours. Sprinkle sugar on pastry cloth or board. Roll out small portion of dough to 1/4-inch thickness or less, and cut into squares of desired size. Place filling in center and pinch 2 opposite corners together – Place on ungreased cookie sheets and bake in a 3500 oven for 10 to 12 minutes.

EASY KIFLES
Dough Ingredients:
4 cups flour
2 cups margarine
4 egg yolks, beaten
1 cup sour cream

Filling Ingredients:
5 cups ground walnuts
1 cup sugar or honey
1/2 cup warm milk
Directions:
Mix together filling walnuts, sugar and milk. Cut margarine into flour. Add egg and sour cream; mix well. Knead on lightly floured board. Divide dough into 4ths; cover with saran wrap and refrigerate. Roll out each piece into 16x12-inches. Cut pieces into 2x2-inches. Use 1/2 teaspoon filling. Fold over, Place fold down on greased cookie sheet. Bake at 400degrees for 12 minutes. Roll in powdered sugar when cool. Makes 16 dozen.
